[...] If you’re like me, you’ve probably spent a lot of time on Epicurious, the food site that has a mammoth search engine of Gourmet and Bon Appetit recipes. Even if I don’t always end up using their recipes (some of the stuff from Gourmet is way too complicated for a simple gal like me) I’ll almost always hit it up for research purposes. Case in point: Epicurious provided some valuable ideas and options for yesterday’s bread salad. [...]

Yeah, I don't think I would be a fan of entirely mushy bread. Although I've been eating it for the last couple days and the flavors really develop after a prolonged soaking, even if the bread does get mushy.

That looks delicious! I agree on the no soaking, it sounds much better al dente. Are you making no cook desserts along with the dinners?

Since stuffing/ dressing is my favorite dish at Thanksgiving, I would guess that I would love a bread salad too. I am in agreement with your decision not to soak the bread. Mushy bread is gross. You need something to bite into if it dissolves on your tongue then it just feels like baby food.
